This super tasty fruit and nut slice is deliciously addictive and the absolute perfect pairing for your morning or afternoon cup of tea or coffee! It’s ideal for when you are craving that classic homemade sweet taste but just don’t want to be slaving away in the kitchen all afternoon. It only takes about 10 minutes preparation time and half an hour in the oven before you can slice it up, make a cuppa and sit back and relax. Yum!

Ingredients

  • 1/2 cup chopped walnuts, plus extra to serve
  • 1 cup coconut
  • 1 cup brown sugar
  • 1 cup chopped sultanas
  • 1 cup self raising flour
  • 125g butter
  • 1 tablespoon Golden Syrup
  • 1 beaten egg

Method

  1. Preheat oven to 180C. Grease a 18cm x 28cm slice tin. Line with baking paper. In a medium bowl, add walnuts, coconut, brown sugar, sultanas and flour. Mix well to combine and smooth out.
  2. Melt butter in a small saucepan over low heat. Add golden syrup and stir well. Pour mixture into dry ingredients. Add egg. Stir to combine completely. Spoon mixture into pan and smooth top. Top with remaining walnuts. Bake for 25-30 minutes. Leave to cool in pan for 10 minutes. Turn out onto wire rack to cool completely. Slice. Serve.
