Delicious strawberry and pistachio tart

This delicious tart will certainly satisfy that sweet tooth!

Combining the sweet flavour of strawberry jam with the nutty taste of pistachio, it makes an impressive dessert and is sure to delight friends and family the next time you’re asked to bring along a plate for a dinner or event. Top with fresh strawberries and you’ll be tucking into this scrumptious dessert in no time.

INGREDIENTS

FOR THE FILLING

  • 1/2 cup pistachios
  • 1/2 cup almond meal
  • 100g butter, softened
  • 1/2 cup caster sugar
  • 1 egg
  • 1 egg yolk
  • 1/4 cup plain flour
  • 1/2 cup strawberry jam
  • 350g fresh strawberries, washed, thinly sliced

FOR THE PASTRY

  • 1 1/2 cup plain flour
  • 1/3 cup icing sugar
  • 125g butter, chilled, chopped
  • 1 egg yolk

METHOD

  1. To make the pastry, process the flour, icing sugar and butter in a food processor until the mixture resembles fine breadcrumbs.
  2. Add egg yolk and two teaspoons of chilled water. Process until dough just comes together.
  3. Turn onto a floured surface and shape it into a disc. Cover and place in the fridge for 30 minutes to chill.
  4. Preheat oven to 200C.
  5. Roll dough on a lightly floured surface to a 3mm-thick disc. Line base and side of a 22cm-round fluted tart pan with removable base with pastry.
  6. Trim the edge. Place in the fridge for 15 minutes to chill.
  7. Line the pastry with baking paper and fill with pastry weights. Bake for 10 minutes.
  8. Remove the paper and weights. Bake for a further 10 minutes. Reduce oven to 180C.
  9. Meanwhile, process the pistachios until finely ground. Add the almond meal and process until combined.
  10. Use an electric mixer to beat the butter and sugar until pale and creamy.
  11. Add the egg and egg yolk and combine. Add the pistachio mixture and the flour and stir to combine.
  12. Spread filling over the pastry case. Bake for 30 minutes. Set aside to cool completely.
  13. Melt the jam in a saucepan over low heat. Strain through a fine sieve into a bowl. Discard seeds.
  14. Brush half the jam over the filling. Arrange strawberries over the top. Lightly brush the strawberry with the remaining jam.
