There’s nothing quite like coming home to a slow cooker dinner that’s ready to serve, and this Slow Cooker Butter Chicken makes it easy to enjoy a takeaway favourite at home. Serves: 4

Ingredients

1 onion, diced
1 carrot, diced
2 cups pumpkin, cubed
450g tomato passata
200ml chicken stock
1 sachet Mingle Butter Chicken Recipe Base
700g chicken thighs, skinless and boneless
3 tbsp unsalted butter
200ml thickened cream
Steamed basmati rice, to serve
Naan, to serve

Method

Add the tomato passata, chicken stock, Mingle Butter Chicken Recipe Base, onion, carrot, pumpkin and chicken thighs to the slow cooker. Stir well to combine and coat the chicken in the sauce.
Add the butter, cover and cook on low for 4 hours.
Remove the chicken from the slow cooker and cut it into bite-sized pieces. Return the chicken to the sauce.
Stir the thickened cream through the sauce and cook on low for a further 1 hour. For a thicker sauce, increase the slow cooker to medium for the final hour.
Serve with steamed basmati rice and warm naan, garnished with fresh herbs if desired.

Recipe notes

Freeze: Store leftovers in an airtight container for up to 3 months.

Shortcut: Swap the thickened cream for coconut milk to make a dairy-free version.

Batch cook: Double the recipe and portion into individual serves for easy weekday lunches.
