Prosciutto-Wrapped Chicken with Crispy Potatoes

Ingredients

4 chicken breasts
8 slices prosciutto
600 g baby potatoes, halved
2 tbsp olive oil
3 cloves garlic, crushed
1 tsp dried oregano or thyme
Salt and pepper, to taste
Juice of ½ lemon
Fresh parsley, chopped (optional, for serving)

Method

Preheat oven to 200°C (180°C fan).

Prepare the potatoes:
Toss the halved potatoes with 1 tablespoon olive oil, garlic, herbs, salt and pepper. Spread on a baking tray and roast for 20 minutes.

Wrap the chicken:
Season chicken lightly with pepper (prosciutto is already salty). Wrap each breast with 2 slices of prosciutto, covering as much as possible.

Add to tray:
Remove the potatoes from the oven, push them to the sides, and place the wrapped chicken in the centre. Drizzle with remaining olive oil.

Bake:
Return to the oven and cook for another 20–25 minutes, or until the chicken is cooked through and the prosciutto is crisp.

Finish:
Squeeze over lemon juice and sprinkle with fresh parsley before serving.

Serving suggestion

Serve straight from the tray with a simple green salad or steamed greens for a fresh contrast.
