Pesto has long been a staple of many households through the generations, and is often seen as a healthy alternative to other pasta sauces. Whether or not this is true, this rich and creamy dish is sure to delight the taste buds and only requires two pots, making cleanup easier than most pasta recipes!
Ingredients
- 1/2 a chicken breast, chopped into cubes
- 1/2 an onion, chopped
- 1 rasher of bacon
- 4 chopped mushrooms
- 1 tomato, chopped
- 1 cup of pasta, cooked
- 2 tablespoons basil pesto
Methods
- Add oil to pan and fry onion, chicken and bacon until cooked, then remove from pan.
- Add mushrooms to pan, and fry in oil. At the same time, boil pasta until al dente.
- Drain pasta and stir pesto through.
- Mix chicken, bacon and onion with mushrooms, and add to pasta mix. Serve and add chopped tomato to the top of the pasta. The cold tomato on the hot pasta makes a beautiful contrast.
- You can add a few fresh herbs if you choose, and some grated parmesan cheese for flavour and decoration.
