Homemade chicken nachos

Chicken Nachos are a delicious way to get dinner on the table in 20 minutes. This cravable finger food favourite is made even easier hearty loaded shredded chicken. It’s easy to scale up this recipe to serve a crowd or shrink it down for a single serving. From family dinner to the footy game, everyone will cheer when these are on the menu!

Ingredients

  • 1 tbsp olive oil
  • 500g Australian chicken breast mince
  • 40g pack Mexican seasoning
  • 250g pack tortilla chips
  • 1 cup (120g) coarsely grated tasty cheddar
  • 350g mixed tomatoes, halved
  • 1/2 small red onion, thinly sliced

Method

  1. Preheat oven to 200°C. Line 2 baking trays with baking paper. Heat the oil in a medium frying pan over medium heat. Cook the mince, stirring with a wooden spoon to break up lumps, for 5 mins or until cooked through. Add the Mexican seasoning and 1/3 cup (80ml) water. Cook, stirring, for 3 mins or until the mixture thickens.
  2. Meanwhile, arrange the tortilla chips evenly over prepared trays. Sprinkle with cheddar. Bake for 5 mins or until the cheddar melts.
  3. Divide the tortilla chips among serving bowls. Top with the mince, tomatoonion and we recommend adding sour cream too.
  4. Season to serve.
