Gnocchi with bacon and spinach

If you’re looking for an easy and yet delicious dinner, this gnocchi with bacon and spinach is the perfect quick meal to whip up on a weeknight. It takes very little time or effort to make by using prepackaged gnocchi, but it tastes superb.

Often gnocchi comes in creamy sauces which can be a little bit too rich and filling, but the fresh tomato-based sauce in this one sets it apart and offsets the heaviness of the gnocchi perfectly. This will quickly become a part of your dinner rotation once you try it!

Ingredients

  • 4 slices bacon, diced
  • 400g can diced tomatoes
  • 1 teaspoon sugar
  • ¼ teaspoon chilli flakes
  • 1 tablespoon balsamic vinegar
  • 500g gnocchi
  • 100g baby spinach (about 5 cups)
  • 200g cherry tomatoes, halved
  • Parmesan cheese, grated

Method

1. Fry bacon in a large fry pan on medium-high heat until cooked. Add tomatoes, sugar, chili flakes, and vinegar and cook for about five minutes.

2. Meanwhile, bring a pot of salted water to a boil and cook the gnocchi according to the package instructions.

3. Add spinach to gnocchi and cook just until it begins to wilt. Drain gnocchi and spinach and add to fry pan, along with cherry tomatoes.

4. Stir to combine, and serve with grated parmesan.
