Ginger, cinnamon and syrup biscuits

These biscuits are the perfect combination of chewy and crunchy, and make a fun treat for everyone young and old.  It is one of my personal favourite recipes and I am baking them today.

Ingredients

1 1/2 cups butter, softened

2 cups granulated sugar

1/2 cup golden syrup

2 eggs

4 cups plain (all purpose) flour

4 tsp. baking soda

2 tsp. ground cinnamon

1 tsp. ground mixed spice

1 tsp. ground ginger

1 tsp. salt

1/2 cup raw sugar

 

Method

Mix the dry ingredients of flour, spices, baking soda, salt and ginger together in a bowl and set aside.

Cream the butter and sugar.

Add the syrup and eggs.

Mix with a beater until smooth.  Then add the dry ingredients to the wet ingredients.

Roll into balls, press flat then roll in raw sugar before placing on a tray, 1 inch apart.

Bake in a moderate oven for 8-12 minutes until golden brown.

Remove from oven and cool on wire racks.  The finished product is deliciously chewy biscuits on the inside with crisp crunchy outsides.
