Four-ingredient coffee shortbread

These delicious bite-sized treats mix together the two classic afternoon tea flavours to make the ultimate biscuit. The coffee-flavoured shortbread biscuits are super easy to whip up and perfect to enjoy with your family and friends for morning or afternoon tea.

The subtle flavour of coffee is just enough to satisfy any caffeine cravings while also treating your sweet tooth! But there’s one thing that makes these treats even better and that’s dipping them in your afternoon cuppa to double the coffee taste!

Ingredients

  • 250g butter, at room temperature
  • 1 cup (150g) icing sugar
  • 3 teaspoons instant coffee
  • 2 3/4 cups (415g) plain flour

Method

  1. Preheat oven to 180C. Line a baking tray with baking paper. Place butter and icing sugar in bowl. Use electric mixer to beat together until pale and creamy.
  2. Dissolve instant coffee in 3 teaspoons of water. Add to butter mix. Beat well.
  3. Stir in flour until well combined. Mixture will appear crumbly at first. Keep stirring to combine. Roll tablespoons sized balls and place on prepared baking tray.
  4. Flatten balls slightly with back of hand. Bake for 15-20 minutes or until golden and crisp. Set aside to cool.
