Simple 4-ingredient caramel and peanut slice

Now this is a treat that the grandkids will go absolutely wild for! With just four ingredients you don’t have to worry about much when it comes to this super simple recipe. These bite-sized squares not only taste mouthwateringly good but they’re great for a bit of a guilty pleasure treat when you feel like something deliciously rich and sweet.

They’re also fantastic for whipping up in bulk, cutting into easy squares and taking to family get togethers, birthdays or picnics. They’ll stay fresh in an airtight container in the fridge for about three days, otherwise pop them in the freezer to enjoy them for even longer!

Ingredients

  • 200g packet jersey caramels
  • 1 1/4 cups crunchy peanut butter
  • 2 eggs, lightly beaten
  • 1 1/2 cups caster sugar

Method

  1. Preheat oven to 180C. Grease and line base and sides of a 18cm x 28cm slice pan with 2 layers of baking paper, leaving about 2cm overhang.
  2. Cut caramels into quarters. Combine peanut butter, egg and sugar in a mixing bowl. Stir in caramels. Spoon mixture into prepared pan. Level top with back of spoon.
  3. Bake for 40 minutes or until golden and top is just firm to touch. Cool completely in pan. Carefully lift slice from pan. Slice into squares. Serve.
