We’ve all been there – you open the fridge and spot that punnet of strawberries you bought a few days ago. They’re a little soft, maybe a bit too ripe to slice over cereal, but not bad enough to toss. Don’t throw them out!

Those slightly soft strawberries are perfect for quick, flavour-packed recipes. Their sweetness intensifies as they ripen, making them ideal for sauces, compotes, or simple desserts. Here’s one of the easiest – and tastiest – ways to turn overripe strawberries into something special.

Easy Warm Strawberry Compote with Vanilla and Honey

Prep time: 5 minutes

Cook time: 10 minutes

Serves: 4

Ingredients

2 cups ripe or slightly soft strawberries, hulled and halved
1 tablespoon honey (or maple syrup)
1 teaspoon vanilla extract
1 teaspoon lemon juice
A small pinch of salt

(Optional: add a few mint leaves or a pinch of cinnamon for extra flavour)

Method

Prepare the fruit: Slice any large strawberries in half. Place all the strawberries in a small saucepan.
Add flavour: Stir in the honey, vanilla, lemon juice and salt.
Gently cook: Warm over medium-low heat for 8–10 minutes, stirring occasionally until the strawberries start to break down and release their juices.
Taste and adjust: Add a touch more honey or lemon juice if needed.
Serve warm or chilled: Spoon over Greek yoghurt, pancakes, porridge, ice cream or even spread on toast.

Storage tip

The compote keeps for up to five days in the fridge in an airtight container. You can also freeze it in small portions to add to smoothies or desserts later.

Variations

Strawberry and Rhubarb Twist: Add ½ cup chopped rhubarb.
Berry Medley: Mix strawberries with blueberries or raspberries.
Grown-Up Version: Add a splash of balsamic vinegar or a drizzle of liqueur for a richer flavour.
