Delicious bacon and potato casserole

This great bacon casserole is a favourite in many households! It’s so tasty and creamy, that you’ll want to make it often.


  • Approx 4 large spuds, peeled and thinly sliced
  • 1 large onion
  • Approx 300 to 400g bacon pieces
  • 2 – 3 handfuls of grated cheese
  • Large can of creamed corn
  • Large tomato, thinly sliced (optional)


  1. Fry the onion in a bit of oil, add bacon and cook till lightly browned. Take off the heat and stir in creamed corn.
  2. Layer in casserole bacon mix, cheese, and spuds with bacon mix at the top.
  3. Top with optional tomato slices and a layer of cheese.
  4. Cover and cook at 180° for 45 mins.
  5. Remove the lid and cook additional 15 minutes.
