Delicious and crumbly ginger, cinnamon and syrup biscuits

These biscuits are the perfect combination of chewy and crunchy, and make a fun treat for everyone young and old. Pair it with a delicious glass of fresh milk to start your day right, or keep it for dessert!

Ingredients

  • 1 1/2 cups butter, softened
  • 2 cups granulated sugar
  • 1/2 cup golden syrup
  • 2 eggs
  • 4 cups plain (all purpose) flour
  • 4 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 1 tsp. ground mixed spice
  • 1 tsp. ground ginger
  • 1 tsp. salt
  • 1/2 cup raw sugar

Method

  1. Mix the dry ingredients of flour, spices, baking soda, salt and ginger together in a bowl and set aside.
  2. Cream the butter and sugar.
  3. Add the syrup and eggs.
  4. Mix with a beater until smooth. Then add the dry ingredients to the wet ingredients.
  5. Roll into balls, press flat then roll in raw sugar before placing on a tray, 1 inch apart.
  6. Bake in a moderate oven for 8-12 minutes until golden brown.
  7. Remove from oven and cool on wire racks. The finished product is deliciously chewy biscuits on the inside with crisp crunchy outsides.
