Ingredients
- 1 1/2 cups butter, softened
- 2 cups granulated sugar
- 1/2 cup golden syrup
- 2 eggs
- 4 cups plain (all purpose) flour
- 4 tsp. baking soda
- 2 tsp. ground cinnamon
- 1 tsp. ground mixed spice
- 1 tsp. ground ginger
- 1 tsp. salt
- 1/2 cup raw sugar
Method
- Mix the dry ingredients of flour, spices, baking soda, salt and ginger together in a bowl and set aside.
- Cream the butter and sugar.
- Add the syrup and eggs.
- Mix with a beater until smooth. Then add the dry ingredients to the wet ingredients.
- Roll into balls, press flat then roll in raw sugar before placing on a tray, 1 inch apart.
- Bake in a moderate oven for 8-12 minutes until golden brown.
- Remove from oven and cool on wire racks. The finished product is deliciously chewy biscuits on the inside with crisp crunchy outsides.
