No-Bake Passionfruit Vanilla Slice (Ready in Minutes, No Oven Required)

This passionfruit and vanilla slice is super easy to make thanks to a few clever time-saving shortcuts that mean you can whip up a beautiful treat without ever turning the oven on. The custard is perfectly wobbly and smooth, while lattice biscuits stand in for pastry, making this one of the easiest vanilla slices you’ll ever pull together.

Once you’ve assembled the lot and left it to set in the fridge, simply slice it into squares and serve up for a very special afternoon tea treat. Enjoy!

No-Bake Passionfruit Vanilla Slice

Serves 9-12 | Prep: 15 minutes | Chill: 30 minutes

Ingredients

Slice

  • 1 packet of lattice biscuits
  • 600ml double cream
  • 100g packet vanilla pudding mix

Passionfruit Icing

  • 1 cup icing sugar
  • 1 tablespoon passionfruit pulp
  • 1 tablespoon butter, softened

Method

  1. Line a rectangular baking dish with baking paper and place a layer of biscuits into the base of the dish.
  2. In a bowl, combine the cream and pudding mix, and mix until thick.
  3. Pour the mixture over the biscuit base, then top with another layer of biscuits. Refrigerate for at least 30 minutes before icing and slicing.
  4. Combine the icing sugar, passionfruit pulp and softened butter in a bowl until it reaches a smooth, spreadable consistency.
  5. Spread the icing evenly over the top of the slice, then cut into squares and serve.

Tips

  • For the cleanest cuts, use a sharp knife warmed briefly under hot water and dried between slices.
  • If you can’t find lattice biscuits, Marie or milk arrowroot biscuits make a good substitute, though the texture will be slightly different.
  • This slice keeps well in the fridge for up to 3 days in an airtight container, making it a great make-ahead option for visitors.
  • For an extra hit of passionfruit flavour, stir a tablespoon of fresh pulp through the cream and pudding mixture as well as the icing.
