This wholesome dish is so tasty and absolutely perfect to tuck into on a cold night in curled up on the coach. The mixture of chicken, bacon and potato wrapped in the creamy and cheesy sauce is irresistible and makes for a great weeknight meal that takes little effort for a delicious result.

Serve on its own or with a side of veggies or salad and dig in! 

Ingredients

  • 500g boneless chicken breasts, diced
  • 6 bacon slices, cooked and crumbled
  • 4 medium potatoes, peeled and sliced
  • 2 cups grated cheddar cheese
  • 1/2 cup thickened cream
  • 1 tsp caster sugar
  • 2 tsp fresh thyme, chopped
  • 1 tbsp rosemary leaves, chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 3 tbsp unsalted butter, cubed

Method

  1. Preheat oven to 180C. Grease a casserole dish. In a small bowl, whisk cream and sugar together. Add thyme, rosemary, garlic powder, salt and pepper into the bowl. Stir to combine. Set aside.
  2. In the prepared baking dish, add chicken and potatoes. Crumble bacon over the top. Sprinkle 1 cup of cheese. Pour the cream mixture over the top. Make sure to cover completely. Add cubes of butter.
  3. Cover with aluminium foil. Bake for 60 minutes. Carefully remove cover. Top with remaining cup of cheese. Bake for another 15 to 20 minutes until top is golden and bubbly. Garnish with rosemary. Serve hot.
