Ingredients

  • 2 sheet puff pastry, thawed
  • 300ml milk
  • 600ml thickened cream
  • 2 packs instant pudding, vanilla flavoured
  • 1/4 cup pure icing sugar

Method

  1. Preheat oven to 210C. Line the baking tray with baking paper. Line slice tin with baking paper. Score pastry sheets and bake for 10-15 minutes or until puffed and just golden. Remove from oven and place a tray on top of sheets to make it flat. Cool.
  2. Add milk, cream and pudding mix to bowl. Use an electric mixer to beat until thick.
  3. Gently cut one pastry sheet to fit the base of the slice tin. Place in the tin. Pour the custard mixture into the slice tin and smooth it out evenly with the back of a spoon. Cut the second sheet of pastry and place gently on top. Press down slightly to secure.
  4. Place in refrigerator to chill for about 3 hours. Sprinkle with sifted icing sugar. Slice into even squares. Serve.
