Cheesy chicken pepper broccoli frittata

Frittatas are one of the most versatile meals out there. You can put pretty much whatever you’d like into them, or leave out or substitute any additions you don’t like, so they will never get boring.

This healthy frittata recipe calls for chicken and broccoli and has a cheesy flavour with pepper for a little bit of a bite. Of course, you can always add more or less or none at all, according to taste. You could even put in some more of your favourite vegetables instead of chicken to make it vegetarian.

Ingredients

  • 200g cooked chicken breast, diced
  • 1 tablespoon extra virgin olive oil
  • 2 cups broccoli florets
  • 3 green onions, chopped
  • 2 cloves garlic, crushed
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 eggs
  • 1/2 cup grated cheddar cheese

Method

1. Preheat oven to 175C and spray a 23cm pie dish with nonstick cooking spray.

2. In a large frypan, heat the oil over a medium heat and sauté the broccoli for 5 minutes or until it begins to soften. Add the onions, garlic, salt, and pepper, and cook for a further minute or two before removing from heat.

3. Whisk eggs together in a large mixing bowl, then add cheese, chicken, and broccoli mixture. Once combined, pour into the pie dish.

4. Bake for 35-40 minutes, or until the centre is almost set. Serve warm.
