Pasta carbonara is a go-to dish when looking for something that will please everyone but that isn’t too difficult to make. While the original recipe is already fairly simple, this cheat’s version can be whipped up in under 15 minutes and is absolutely ideal for any time-poor cooks out there.
Even though it’s super easy to make, this dish still maintains that classic creamy taste that everyone knows and loves. Serve it up to your hungry family and friends or enjoy it as a dish on your own when you simply don’t feel like being stuck in the kitchen cooking all night! Enjoy!
Ingredients
- 375g spaghetti
- 1 tablespoon olive oil
- 200g shortcut bacon rashers, cut into 2cm-long pieces
- 2 eggs
- 2 egg yolks
- 1/2 cup pure cream
- 2/3 cup finely grated parmesan cheese, plus extra to serve
Method
- Add pasta to large saucepan of boiling salted water. Cook according to packet directions until tender. Drain. Return to pan.
- Meanwhile, heat oil in frying pan over medium-high heat. Add bacon and cook for 4 minutes or until crisp.
- Add eggs, egg yolks, cream and parmesan to a jug. Whisk well to combine. Season with pepper.
- Pour bacon and egg mixture into pasta. Cook and toss to coat over low heat for 1 minute or until combined. Transfer to serving bowl. Sprinkle extra cheese and season with pepper. Serve.
