Melt in your mouth passionfruit shortbread biscuits

These delicious melt-in-the-mouth passionfruit shortbread biscuits make for the perfect afternoon treat.

Quick to whip up, this buttery mixture is made with butter, caster sugar, rice and plain flour and passionfruit, sprinkled in icing sugar — it’s that simple! And it’s fair to say the passionfruit is the star ingredient, delivering that tangy burst with every bite.

Not a passionfruit fan? Don’t fret — you can substitute with lemon or orange zest if you prefer. Bake a batch, pour yourself a cuppa and settle in.

Ingredients

  • 150g butter, softened
  • 1/3 cup caster sugar
  • 1/4 cup rice flour
  • 1 cup plain flour
  • 2 passionfruit
  • Icing sugar mixture, for dusting

Method

  1. Preheat oven to 150°C. Grease and line two baking trays with baking paper.
  2. Using an electric mixer, beat butter and 1/4 cup sugar until light and fluffy.
  3. Using a wooden spoon, stir in flours. Strain passionfruit, discarding seeds.
  4. Add passionfruit pulp to butter mixture. Stir to combine.
  5. Roll one level tablespoon mixture into a ball. Flatten between palms. Place on prepared tray.
  6. Repeat with remaining mixture, placing 2cm apart on tray.
  7. Brush tops lightly with a little water and sprinkle with remaining sugar.
  8. Bake, one tray at a time, for 15 minutes. Serve dusted with icing sugar.
