Blueberry buttermilk muffins

A classic blueberry muffin is made just a little bit more decadent with the addition of buttermilk. This is a versatile recipe, which could be made with your favourite fruit and served for morning or afternoon tea, breakfast on the run or even dessert!

Ingredients

  • 2 ½ cups flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¾ cup sugar
  • ¼ teaspoon salt
  • 2 eggs, beaten
  • 1 cup buttermilk
  • 120g butter or ½ cup canola oil
  • 1 ½ cups blueberries
  • 1 teaspoon vanilla essence

Method

1. Preheat over to 200C. Combine the dry ingredients in a large mixing bowl.

2. In another bowl, whisk together eggs, buttermilk, and melted butter.

3. Make a well in the flour mixture, pour in the buttermilk mixture and combine.

4. Fold in the blueberries, and spoon evenly into lined muffin tins. Bake for 20-30 minutes or until a skewer inserted comes out clean.
