A tasty potato salad with a special twist

Potato salads are quite easy to make but experimenting with different ingredients is all part of the fun. This great, tasty artichoke and potato salad is a winner!


  • 650g potatoes
  • 1/2 cup virgin olive oil
  • 1 tbsp wine vinegar
  • 1 tbsp lemon juice
  • 1 anchovy fillet
  • 1 tsp dijon mustard
  • salt and pepper
  • 1 x 400g can artichoke hearts
  • 4 shallots, thinly sliced
  • 4 hard-boiled eggs
  • 3 black olives, slivered


  1. Steam and dice potatoes
  2. Combine oil, vinegar, lemon juice, mashed anchovy fillet and mustard in a bowl. Pour over potatoes and let cool.
  3. When ready to serve, layer with chopped eggs, artichokes, shallots and slivered olives. Add whole olives when complete.
