If you’re looking for a light weekend snack to enjoy alongside your afternoon cuppa, give these delicious banana yoghurt muffins a go! With just a handful of budget-friendly ingredients, these sweet treats will be incredibly easy to whip up with almost no effort at all.
Try them as a quick snack in between meals or as a treat to satisfy your sweet tooth after dinner. These are perfect to bake in bulk and freeze to enjoy later down the track, or you can have them all in one go if you prefer! Enjoy!
Ingredients
- 1 3/4 cups self-raising flour
- 1/2 cup caster sugar
- 1 cup natural yoghurt
- 1 egg
- 2/3 cup vegetable oil
- 2 large bananas, mashed
Method
- Preheat oven to 180C. Lightly grease 12-hole, 1/3 cup-capacity muffin pan. Sift flour and sugar into bowl.
- Combine yoghurt, egg, oil and 1 cup mashed banana in large bowl. Gradually add dry ingredients, stirring until just combined.
- Spoon mixture into muffin holes. Bake for 20 to 25 minutes or until a skewer inserted into the centre comes out clean. Stand muffins in pan for 5 minutes. Turn onto a wire rack to cool completely. Serve warm or cold.
