Few cakes are as comforting and universally loved as a lemon drizzle cake. With its soft buttery crumb, vibrant citrus flavor, and that signature tangy syrup soaking into the top, it’s a simple bake that delivers big flavor. Popular across the UK and beyond, it’s the kind of cake that works just as well for afternoon tea as it does for dessert.
One of the reasons lemon drizzle cake remains so popular is how easily it can be personalized. Home bakers often add their own twists – extra lemon zest, poppy seeds, berries, glazes, or even herbs like thyme. While the classic version is perfect on its own, these small variations allow bakers to make the cake uniquely theirs while keeping the bright lemony character that makes it special.
Below is a classic lemon drizzle cake recipe that you can easily adapt with your own creative touches.
