Easy Seasonal Strawberry Eton Mess (Serves 4)

Ingredients

2 cups fresh strawberries, hulled and sliced
1 tbsp caster sugar (optional, depending on sweetness of berries)
1 tbsp lemon juice
1 cup thickened cream
1 tsp vanilla extract
1 tbsp icing sugar
4–6 store-bought meringues, roughly crushed
Extra strawberries or mint to garnish

Method

Prepare the strawberries:
In a bowl, toss the sliced strawberries with caster sugar and lemon juice. Leave for 10 minutes to create a natural syrup.
Whip the cream:
In a large bowl, whip the thickened cream with vanilla and icing sugar until soft peaks form.
Assemble:
Gently fold the crushed meringue and half the strawberries through the whipped cream. Don’t over-mix – the streaks make it pretty!
Serve:
Spoon into glasses or bowls. Top with the remaining strawberries and a sprig of mint.
Enjoy immediately for the best crunch and freshness.
