Finding a savoury snack for the afternoon that isn’t loaded with salt and additives can be difficult – especially if you find yourself in the chips aisle! – but this delicious slice is a healthy, tasty and easy homemade snack you’ll keep coming back to.
It can be served warm or cold and is perfect for picnics, snacks or a light lunch. This version is packed with veggies and herbs and a little ham and cheese for added flavour. Serve it up with a fresh salad and dig in!
Ingredients
- 2 medium carrots, peeled, grated

1 medium zucchini, grated

1 medium brown onion, finely chopped

100g sliced leg ham, finely chopped

2 garlic cloves, crushed

1 cup grated pizza cheese

1 cup self-raising flour

1/4 cup chopped fresh flat-leaf parsley leaves

4 eggs, lightly beaten

1/4 cup milk

1/4 cup rice bran oil

Mixed salad, to serve
Method
- Preheat oven to 180C. Grease a 18cm x 28cm slice pan. In a bowl add carrot, zucchini, onion, ham, garlic, cheese, flour and parsley. Stir well. Season with salt and pepper. Add egg, milk and oil. Mix to combine.
- Spoon mixture into pan and spread evenly across. Bake for 30-35mins until top is firm to touch. Set aside to cool.
- Cut into even squares. Serve.
