This delicious and incredibly simple dish is absolutely ideal for morning or afternoon tea. With only seven ingredients and a method that’s as easy as throwing everything in a bowl and stirring, this tasty, moist loaf will quickly become a family favourite. The addition of the walnuts adds a delicious nutty taste in each nite and ingests a little extra health kick, too. Walnuts are super rich in antioxidants and have been shown to help improve brain health. For the best taste, toast each slice and scrape over a thin layer of butter. Yum!
Ingredients
- 300g (2 cups) self-raising flour
- 70g (1/3 cup, firmly packed) brown sugar
- 100g walnuts, coarsely chopped
- 1 teaspoon bicarbonate of soda
- 2 eggs, lightly whisked
- 250ml (1 cup) milk
- 1 cup (about 2 large) mashed banana
Method
- Preheat oven to 180C. Line base and sides of a 6cm-deep, 20 x 10cm loaf pan with non-stick baking paper.
- Sift flour into large bowl. Add sugar, walnuts and bicarbonate of soda. Stir together to combine.
- Place egg, milk and banana in bowl with dry ingredients. Gently fold until well combined. Spoon mixture into lined pan. Bake in oven for 45 minutes or until a skewer inserted into the centre comes out clean. Set aside to cool completely. Slice and serve.
