Slow-cooker chicken tikka masala

You can’t go wrong with curry for dinner and this traditional chicken tikka masala is one of the tastiest out there. While curries are generally pretty simple to whip up, this recipe makes the cooking process even easier thanks to the trusty slow-cooker. All you have to do is pop all the ingredients in the machine and let it work its magic throughout the day to be ready to be enjoyed that evening! You’ll end up with succulent, flavourful chicken that’ll have you going back for seconds every time. Enjoy!

Ingredients

  • 1kg chicken thigh fillets, cut into large pieces
  • 2 x 400g tins crushed tomatoes
  • 2 large brown onions, thinly sliced
  • 2/3 cup (200g) tikka masala curry paste
  • 1/4 cup (60ml) thickened cream
  • 1 cup coarsely chopped fresh coriander
  • Steamed basmati rice, to serve
  • Raita, to serve

Method

  1. Add chicken, tomatoes, onion and paste to bowl of 5L slow-cooker.
  2. Cover and cook on high for 3 1/2 hours or until chicken is cooked through.
  3. Drizzle cream over the top. Sprinkle with coriander. Serve over the top of steamed rice and raita.
