Irish whiskey bananas and ice cream

St Patrick’s Day may be over but these whiskey bananas and ice cream are keeping the Irish spirit alive and kicking! It’s such a simple recipe – but all the best are – and the flavour you get here is mouthwateringly amazing. The bananas are fried in a pan with lashings on whiskey until they turn sticky and and delicious and are spooned over the top of a double scoop of vanilla ice cream. Top with a sprinkling of crushed walnuts for a bit of crunch and dig in!

Ingredients

  • 110g butter
  • 110 light brown sugar
  • 120ml Irish whiskey
  • 4 large bananas, peeled and halved lengthwise
  • Vanilla ice cream, to serve

Method

1. Melt the butter in a deep-sided frying pan over medium heat. Stir in the brown sugar and whisky. Bring to the boil and cook, stirring, until sugar has dissolved.

2. Reduce heat to a simmer. Add bananas and simmer gently until bananas are warmed through and glazed with the syrup. Serve immediately with vanilla ice cream.
