You probably don’t want to spend hours in the kitchen when the grandkids are visiting, and they certainly won’t be impressed with a salad, so these cheesy meatballs are sure to tick all of the boxes.
Makes: 15 meatballs
Ingredients
Sauce
1/4 cup olive oil
2 cloves garlic, minced
1 tbsp chopped oregano
1 can crushed tomatoes
Meatballs
700g beef mince
1/2 cup breadcrumbs
2/3 cup grated Parmesan cheese
2 tbsp chopped parsley (extra for garnish)
2 cloves garlic, minced
1 egg
1/2 tsp red pepper flakes
1/3 cup shredded mozzarella
Basil, thinly sliced, for garnish
Method
Preheat oven to 190°C.
Heat oil in a large bowl over low heat. Add garlic and oregano and stir until fragrant. Add tomatoes and season with salt and pepper. Let mixture simmer while you make the meatballs.
In a large bowl combine beef mince, breadcrumbs, 1/4 cup of Parmesan, parsley, garlic, egg, red pepper flakes and season with salt and pepper. Mix until combined and then form into 15 meatballs.
Place meatballs in a baking dish and bake for 20 minutes.
Add sauce over the top and sprinkle with mozzarella and 1/3 cup of Parmesan. Return to oven for a further 15 to 20 minutes, until cheese is melted and meatballs are cooked through.
Garnish with remaining Parmesan and basil and serve alone or with pasta.
