Recipe: Meghan’s ‘must serve’ Thanksgiving staple for Harry

Meghan Markle may find herself in a little trouble with Prince Harry this Thanksgiving if she forgets one key holiday essential: a rich, homemade gravy. The Duchess of Sussex, 44, revealed that the 41-year-old prince insists on the classic Thanksgiving gravy as part of their festive feast in their lavish $47 million California mansion tomorrow.

In new hosting tips shared with People, Meghan revealed her simple tricks for creating a stress-free Thanksgiving filled with flavour and family fun.

“Chop your veggies and herbs in advance to save time on the day, and also for those finishing touches, whether you’re serving homemade or store-bought dishes,” she advised. She also encouraged getting children involved in the prep: “Your kids can join in too! They can proudly say they helped.”

One of her favourite hacks is transforming carrot tops into a fresh, bright pesto. “Keep the tops and blend them with parmesan, olive oil and pine nuts for a refreshing take on pesto to elevate your holiday spread.”

Meghan says her ideal Thanksgiving plate includes “creamy mashed potatoes, a green salad speckled with flower sprinkles and rich gravy (my husband would never forgive me if I didn’t add that to the table).”

To create a cosy Thanksgiving atmosphere, she recommends lighting plenty of candles – scented for living areas and unscented in the kitchen so “the fragrance of the food shines.”

She also suggests welcoming guests with a drink and easy appetisers – “think baked Brie with jam” – plus a few ice breakers like puzzles or board games to spark conversation.

“Being a great host is all about anticipating your guests’ needs,” Meghan said. “With a little thoughtful planning, you can make everyone feel comfortable and cared for.” And her final tip: accept help. “When guests offer to help, say yes!”

Meghan-Style Rich Gravy Recipe 

Ingredients

3 tbsp butter
3 tbsp flour
2 cups chicken or turkey stock (homemade if possible)
½ cup white wine or dry vermouth (optional)
1 small shallot, finely minced
1 tsp Dijon mustard
1 tsp soy sauce or tamari (adds depth)
1 tsp fresh thyme, finely chopped
Salt and pepper to taste
1–2 tbsp pan drippings from roasted turkey or chicken (if available)

Method

Sauté the shallot in 1 tbsp butter over medium heat until soft and fragrant.
Add the remaining butter, melt, then stir in the flour to form a smooth roux. Cook for 2 minutes until lightly golden.
Slowly whisk in the stock, stirring constantly to avoid lumps.
Add wine (if using), thyme, Dijon, soy/tamari and pan drippings.
Simmer for 8–10 minutes until thickened and glossy.
Season with salt and pepper.
Strain for an ultra-silky finish (very Duchess-approved).

Rich, elegant and packed with flavour – exactly the kind of gravy Harry would never let Meghan leave off the Thanksgiving table.
