Tuna and chickpea patties

A deliciously light lunch option!

If you’re after an easy lunch or dinner meal that’s both filling and good for you, look no further, as these tuna patties are your answer. They’re packed full of protein from the tuna and the chickpeas. 

These yummy patties make for a great burger patty or, if you’re looking for a low-carb option, they go perfectly with a side salad. They’re lighter than beef or pork patties, but with because they’re protein-heavy, are still satisfyingly filling. 

Ingredients

  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 800g chickpeas, drained, rinsed
  • 185g tuna in springwater
  • 3/4 cup dried breadcrumbs
  • 1/4 cup plain flour
  • 1 small red chilli, chopped
  • 1/4 cup coriander, chopped
  • 1 egg, beaten
  • 1 lemon zest, finely grated

Method

  1. Heat a tablespoon of olive oil in a frying pan on medium heat. Add chopped red onion and sauté for 2-3 minutes or until tender. Transfer to bowl. Leave to cool slightly. Add 200g of chickpeas to a bowl with tuna, breadcrumbs, plain flour, red chilli, coriander, egg and lemon.
  2. Place remainder of chickpeas (600g) in food processor. Process until smooth. Add to tuna mixture and stir well to combine. Season to taste. Shape mixture into eight patties using hands. Place on plate. Chill patties for 15 minutess to ensure they’re firm.
  3. Heat frying pan on medium and spray with oil. Cook patties for 3-4 mins each side, until crisp and golden. Drain on paper towel. Serve with salad or in a soft bun.
