Traditional Mexican lasagna for the holidays

Ahead of end-of-the-year celebrations, keep this recipe on hand so that when the kids return to the nest or the grandkids visit, you’ll be prepared to dish up a mouth-watering classic with a Mexican twist.

It’s simple to make, and fills the belly as well as the heart with warmth!

Ingredients

  • 1 burrito making pack (8 burrito sheets, 1 packet of seasoning, 1 packet of salsa)
  • 500g beef mince
  • 1 onion
  • 1/2 red capsicum
  • 1/2 green capsicum
  • 1 tin of mixed beans
  • Grated cheese
  • 250g punnett cherry tomatoes

Method

  1. Cook the beef mince in a large frying pan until browned. Add seasoning and continue to stir through.
  2. Finely dice all vegetables. Add to the frying pan and continue to stir. Drain the beans and stir through the mince and vegetables.
  3. In a lasagna dish, lay down burrito sheets until the base is covered.
  4. Take the mince off the heat and dish a layer into the lasagna dish. Cover with a thin layer of salsa and grated cheese.
  5. Create another layer of the base of burrito sheets and layer with mince and salsa again. Repeat this process until you only have enough burrito sheets to make one more layer.
  6. Finish the lasagna by covering with remaining burrito sheets and sprinkling grated cheese over the top.
  7. Bake in the oven at 180 degrees Celsius until the cheese has melted and is golden brown.
  8. Serve with avocado guacamole and sour cream!
