Do you love the great flavour you enjoy when eating coddled eggs? This recipe is an easy way to get the same taste with some extra fun! A perfect breakfast that is quick, easy and great for when you have brunch guests!
Ingredients
12 eggs
Ham off the bone
Diced tomatoes, mushrooms and red onion
Grated cheddar cheese
Salt and pepper
Method
Spray each muffin well with nonstick spray.
Place a slice of ham in the bottom of each muffin well. Place about a teaspoon or so of the diced vegetables on top of the ham.
Sprinkle some shredded cheddar cheese over the tomatoes. Break one egg into each spot. Sprinkle a little bit of salt and pepper on each.
Bake at 180 degrees Celsius for 18-20 minutes or until the yolks are as firm as you desire and the whites are cooked through.
