Quick and tasty honey-nut swirls

These buttery, lightly sweetened honey-nut swirls are the perfect way to kickstart a weekend brunch. The puff pastry creates a quick and easy “dough”, which means that unlike more traditional cinnamon and nut scrolls, you don’t have to wait around for things to rise. These delicious flaky treats will be hard to resist!

Makes 24

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 1 cup finely chopped walnuts
  • 1 cup finely chopped pistachios
  • 1/2 cup raisins
  • 3 tbsp brown sugar
  • 2 tbsp butter, softened
  • 2 tbsp honey
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp heavy whipping cream
  • 2 tbsp raw sugar

Method

  1. On a lightly floured surface, unfold puff pastry. Roll into a 30 x 20 cm rectangle.
  2. In a small bowl, combine walnuts, pistachios, raisins, brown sugar, butter, honey, cinnamon and salt. Spread over pastry to within 1.5cm of edges. Roll up starting with a long side. Cut into 1.5cm slices.
  3. Place 5cm apart on baking sheets lined with baking paper. Brush with cream and sprinkle with sugar. Bake at 190C for 10-12 minutes or until lightly browned.
  4. Remove to wire racks and let cool.
