Makes 750g

Ingredients

  • 450g figs, halved or quartered
  • 2 tbsp water
  • 2 tbsp finely grated lemon zest
  • 2 cups white sugar
  • 2 tbsp lemon juice

Method

  1. Put the figs, water and lemon zest into a large pan. Bring to the boil, then reduce the heat and simmer until the figs are soft.
  2. Add sugar and lemon juice and stir over a low heat until sugar has dissolved. Bring to a boil and boil rapidly until setting point is reached.
  3. Remove from heat and allow to cool slightly. Stir once and spoon into hot sterilised jars. Cover, seal and label.
