Ten years ago, I entered a competition with a chance to win one of six bread knives. The rules were simple: create a bread recipe that included Sanitarium Weetbix in the ingredients. I had been making a wholemeal and Weetbix loaf for several years, a favourite with my wife and I, so I submitted it with nothing to lose.
Surprise, surprise! Six weeks later and long forgotten, a package arrive by courier. It contained a beautiful fine-toothed bread knife and a letter of congratulations.
The attached photos are of my wholemeal and Weetbix loaf. My machine is a Tefal, which I find provides a thorough mix of ingredients and a superb texture. Other brands will most likely be similar, although bread pan shape and size varies greatly.

**If you are familiar with the operation of your bread maker, it may pay to start the knead with a little less water, adding more if it seems to be required. The dough needs to be moist but should never be soggy and unfortunately this is a factor that changes slightly from one machine to the next.
