Delicious, healthy and gluten-free banana macadamia bread!

Recently, we called out on the Facbeook page and asked what you would like to see more of in the recipes section at Starts at 60… The consensus was clear – more healthy recipes!

So, we’ve sourced some of the best healthy recipes for you so enjoy! This slice is delicious and guilt-free!

Ingredients

  • 1 cup shredded coconut
  • 3 ripe bananas
  • 3/4 cup coconut flour
  • 1/3 cup apple sauce
  • 6 Medjool dates
  • 1/2 tsp. vanilla essence
  • 1/2 tsp. cinnamon
  • 1 tsp. baking soda
  • 1/8 tsp. sea salt
  • 3/4 cup macadamia nuts

 

Method

  1. Preheat oven to 180˚C
  2. Mix all bread ingredient together except for the flour and macadamia on a med setting in a food processor or blender.
  3. Add the coconut flour (note that this is denser than normal flour so you won’t need as much of it when you’re substituting) and mix until it reaches a dough-like consistency.
  4. Fold in the macadamia nuts.
  5. Put into the oven for about 40 minutes.
  6. Leave to cool, then serve with jam or fresh bananas and coconut cream!
