Chicken and cheese go perfectly together and this cheesy chicken parcel is no different. The crispy pastry and oozing cheese is sure to satisfy. The parcels can be paired with veggies or salad for a hearty dinner or prepared ahead of time to fill lunch boxes.

Ingredients:

• 2 chicken breasts 
• 320g puff pastry 
• 150g garlic and herb cream cheese
• 1/2 lemon, zested and cut into wedges to serve
• 1 tablespoon olive oil, plus extra for brushing

Method:

1. Cut each chicken breast part way through the middle. Use a rolling pin to flatten them slightly.
2. Cut pastry in half widthways and place both parts onto a baking tray. Put chicken breast on top of each piece of pastry and add cream cheese into the middle. Season chicken with lemon zest.
3. Fold each corner of the pastry into the middle and pinch shut, then turn over. Brush a small amount of oil over the top and cook in a 200C preheated oven for 30 minutes.
