Classic Aussie Beef Sausages with Caramelised Onions
Ingredients:
8 good-quality beef sausages
2 large onions, thinly sliced
1 tbsp olive oil
1 tbsp butter
1 tsp brown sugar
1 tbsp balsamic vinegar
Salt and pepper
Soft white rolls or sliced bread to serve
Method:
Heat oil and butter in a pan over low heat. Add onions and cook gently for 15–20 minutes until soft and golden.
Stir in brown sugar and balsamic vinegar, cooking for another 2–3 minutes. Season and set aside.
Cook sausages on a barbecue or grill, turning regularly, until browned and cooked through.
Serve sausages in bread or rolls topped generously with caramelised onions.
Prawn and Mango Aussie Summer Salad
Ingredients:
400g cooked prawns, peeled and deveined
1 large ripe mango, diced
1 avocado, sliced
Mixed salad leaves
1 small red onion, finely sliced
Juice of 1 lime
2 tbsp olive oil
Salt and cracked pepper
Method:
Arrange salad leaves on a large platter.
Top with mango, avocado, red onion and prawns.
Whisk lime juice, olive oil, salt and pepper.
Drizzle dressing over salad just before serving.
Golden ANZAC Biscuits
Ingredients:
1 cup rolled oats
1 cup plain flour
1 cup desiccated coconut
¾ cup brown sugar
125g butter
2 tbsp golden syrup
1 tsp bicarbonate of soda
2 tbsp boiling water
Method:
Preheat oven to 160°C (fan-forced).
Combine oats, flour, coconut and sugar in a bowl.
Melt butter and golden syrup together.
Dissolve bicarbonate of soda in boiling water and add to butter mixture.
Stir wet ingredients into dry.
Roll tablespoons of mixture into balls, place on lined trays and flatten slightly.
Bake for 12–15 minutes until golden. Cool on trays to crisp.
