The classic Zucchini Slice that everyone loves

There are some recipes that never go out of style – the kind that appear at family picnics, school lunchboxes, weeknight dinners and weekend snacks. The humble zucchini slice is one of them. Loved across generations, it’s affordable, dependable and endlessly versatile. Soft on the inside, crisp on top and packed with flavour, this slice is the perfect solution for nights when you want something wholesome without overthinking it. Even better, it reheats beautifully, making it ideal for lunches and grab-and-go snacks throughout the week.

Classic Zucchini Slice Recipe
Ingredients
5 medium zucchinis, grated
1 large onion, finely chopped
1 cup grated cheese (cheddar works best)
1 cup self-raising flour
5 eggs, lightly beaten
200g bacon, finely chopped (optional but traditional)
Salt & pepper, to taste
2 tbsp olive oil

Method
Preheat the oven to 180°C (160°C fan-forced). Grease and line a rectangular baking dish or slice tin.
Prepare the zucchini by grating and gently squeezing out excess moisture using your hands or a clean tea towel.
Combine the ingredients
In a large bowl, mix the zucchini, onion, bacon (if using), cheese and flour.
Add the eggs and oil, stirring until everything is evenly combined. Season generously with salt and pepper.
Pour the mixture into the prepared baking dish and spread it out evenly.
Bake for 35–40 minutes or until golden on top and firm to the touch.
Cool slightly before slicing into squares or bars. Serve warm, at room temperature, or chilled.
