1. Mango Ginger Cooler
A refreshing, hydrating summer drink with a zing.
Ingredients (Serves 2–3)
2 ripe mangoes, flesh removed
1 cup cold water or coconut water
1 tbsp fresh ginger, grated
1 tbsp lime juice
1–2 tsp honey (optional)
Ice cubes
Mint leaves, to serve
Method
Blend mango flesh, water, ginger and lime juice until smooth.
Taste and add honey if you prefer extra sweetness.
Pour over ice, garnish with mint and serve immediately.
Tip: Add a splash of soda water for a light, bubbly version.
2. Mango & Coconut Chicken Curry
A creamy, mildly spicy curry perfect for hot summer nights.
Ingredients (Serves 4)
2 ripe mangoes, puréed
600g chicken breast or thigh, sliced
1 onion, finely sliced
2 garlic cloves, minced
1 tbsp grated ginger
2 tbsp mild curry paste (yellow or korma)
1 can (400ml) coconut milk
1 tbsp lime juice
1 tbsp oil
Salt & pepper
Fresh coriander, to serve
Steamed rice, to serve
Method
Heat oil in a pan and sauté onion until soft.
Add garlic and ginger; cook for 1 minute.
Stir in curry paste and cook for 2 minutes.
Add chicken and cook until lightly browned.
Pour in coconut milk and mango purée, stirring to combine.
Simmer for 10–12 minutes until the chicken is tender.
Add lime juice, season and garnish with coriander.
Tip: For a veggie version, swap chicken for chickpeas or tofu.
3. Mango Yoghurt Parfait
Light, creamy, and perfect for warm evenings.
Ingredients (Serves 4)
2 ripe mangoes, diced
2 cups Greek yoghurt
1 tsp vanilla extract
2 tbsp honey
½ cup toasted granola or crushed biscuits
Fresh mint or coconut flakes, optional
Method
Mix yoghurt, honey and vanilla in a bowl.
In glasses, layer yoghurt, mango and granola.
Repeat layers until filled.
Garnish with mint or coconut flakes.
Tip: Chill the glasses beforehand for an extra-cool dessert.
