Home cook reveals simple secret to the perfect potato bake

There’s nothing quite like a cheesy potato bake to go alongside your main meal. Now one woman’s recipe for potato bake has sent the Internet into a frenzy. Jasmine shared her super simple recipe on her Instagram page where it got the big thumbs up from fellow home cooks.

According to her recipe, all you need is potatoes, thickened cream, shredded cheese and garlic powder — plus one secret ingredient!

“BEST POTATO BAKE EVER,” she captioned the post. She then added: “The secret ingredient is French onion soup mix. It may seem strange but trust me it’s what makes this 10x more flavourful then [sic] the other potato bakes. Recipe courtesy of my mama.”

To make the dish, preheat the oven to 180 degrees celsius. Then, peel and thinly slice the potatoes and place them in a baking dish. Jasmine said she cuts her potatoes about one centimetre thick.

Next, add in some French onion soup mix, garlic powder, salt and pepper to taste, and mix well until all the potatoes are roughly coated with seasoning. Pour in the cream and stir around until the majority of potatoes are just submerged.

Cover with foil and bake for about an hour or until potatoes are fork-tender. Once the potatoes are cooked through, take the tray out of the oven and turn up the heat to 250 degrees celsius. Then sprinkle some cheese on top and pop back in the oven, and bake until the cheese is golden brown and melted. Jasmine says to let the potato bake sit for about 10 to 15 minutes before eating and enjoying it!

People were quick to praise the woman for her tasty potato bake hack, with one writing: “Omg look at that cheese.” Another added: “Yummmmm.” Others said they follow the same recipe, with one commenting: “We use this recipe too, but add bacon.” While another wrote: “French onion soup mix makes potato bake absolutely magical!”

Creamy potato and pumpkin bake

Ingredients

  • 750g potatoes, peeled, cut into 2cm cubes
  • 750g Kent pumpkin, peeled, deseeded, cut into 2cm cubes
  • 270g can corn kernels, drained
  • 300g can chicken and sweetcorn soup
  • 6 eggs, at room temperature
  • 2 tablespoons thyme leaves
  • 1 cup grated tasty cheese

Method

  1. Preheat oven to 200℃. Grease a 10-cup capacity ovenproof dish.
  2. Place potato and pumpkin on to two separate microwave safe plates. Drizzle each with 2 tablespoons of water. Cover with plastic wrap. Microwave on high (100 per cent) for 3 minutes or until both are almost tender. Drain excess juice. Place potato and pumpkin into ovenproof dish. Stir in corn.
  3. Pour soup into jug. Add eggs, thyme and season with salt and pepper. Beat with fork to combine. Pour over vegetables. Shake dish to allow mixture to run through. Top with cheese.
  4. Bake, uncovered, for 45 to 50 minutes or until golden and crispy on top. Leave to cool for 5 minutes. Serve.
