Cheesy zucchini and tuna slice

This delicious zucchini and tuna slice was one of our most popular recipes in 2018!

If you’re after a healthy, savoury snack to beat your cravings in between meals, then this is the recipe for you — not to mention it only takes about 15 minutes to prep. Packed with zucchini, tuna and shredded cheese, this slice is ideal for picnic-style lunches. Enjoy it fresh or store in an air-tight container in the freezer.

Ingredients

  • 1 tbsp olive oil
  • 1 brown onion, finely chopped 
  • 1 garlic clove, crushed
  • 3 medium zucchini, coarsely grated
  • 425g can tuna, drained, flaked
  • 1 cup shredded cheddar cheese
  • 1 cup self-raising flour
  • 1/2 cup olive oil, extra
  • 4 eggs

Method

  1. Preheat oven to 180C. Grease a 17cm x 27cm slice pan. Line with baking paper. 
  2. Heat oil in frying pan over high heat. Add onion and garlic. Cook for 3 minutes until tender. Transfer to large bowl. Add zucchini, tuna, cheddar and flour. Stir to combine.
  3. Whisk extra oil and eggs in separate bowl. Pour into zucchini mixture. Stir together to combine completely. Spoon into prepared pan.
  4. Bake for 40 minutes until golden and cooked through. Cut into even pieces. Serve hot or cold.
