Traditional peppermint slice

There’s nothing Australians love more for morning or afternoon tea than a piece of slice to go with a cup of tea or coffee. There are so many varieties of slice out there, and there’s little doubt that you or your mum have made them all. 

Give this traditional peppermint slice a try – it’s an old favourite of many!

Ingredients

  • 1 1/2 cups self raising flour 
  • 1 cup coconut 
  • 1/2 cup brown sugar 
  • 185g butter melted
  • 375g icing sugar
  • 60g copha
  • 3-4 tablespoons milk
  • 2 teaspoons peppermint extract
  • 1-2 drops green food colouring (optional)
  • 200g chocolate melts
  • 4 tsp vegetable oil 

Method

1. Preheat oven to 180C and line a 20X28cm slice tin with baking paper.

2. Combine flour, coconut, and brown sugar in a large mixing bowl. Add melted butter and stir until crumbly and well combined.

3. Press the mixture evenly and firmly into the base of the prepared slice tin and bake for 20 minutes.

4. Melt the copha in the microwave, then sift icing sugar over and add the milk, peppermint extract and colouring if you wish.

5. Mix until smooth then pour evenly over the warm base in the slice tin, and place in fridge to cool and set.

6. Melt the chocolate and vegetable oil in the microwave, stirring every 30 seconds until completely melted. Pour the chocolate over the peppermint layer and place back in the fridge.

7. Cut into squares to serve, and store in an airtight container.
