If you’re looking for a light and deliciously sweet dessert option that isn’t too rich for guests, then this could be exactly what you’re looking for.
The perfect mix of almond crumble topping with a sweet strawberry filling will impress the whole dinner table – and this particular recipe is incredibly easy too, so it can even be made fresh on the night of your event for a sweeter taste.
It’s best served with a scoop of plain vanilla ice-cream to really compliment the taste, but works perfectly on it’s own too. Enjoy!
Ingredients
- 375g strawberries, hulled, halved
- 2 tablespoons caster sugar
- 1/2 cup plain flour
- 35g butter
- 2 tablespoons flaked almonds
- Vanilla ice cream, to serve
Method
- Preheat oven to 220C. Grease a 16cm x 26cm shallow roasting pan. Place strawberries and half the sugar in pan. Toss to coat generously.
- Add flour and left over sugar in a medium bowl. Stir to combine. Add butter. Use fingertips to rub butter into flour mixture to create a breadcrumb consistency. Add almonds. Stir well to combine. Sprinkle almond mixture over strawberries. Press dough together with fingers to make small lumps.
- Bake for 15 minutes or until top is golden. Spoon into serving bowls. Serve with vanilla ice cream.
