The mix of lemon and pistachio works perfectly, and these treats are super light which also makes them incredibly addictive. Before you know it you’ll have finished a whole batch by yourself! Ingredients

• 190g unsalted butter, melted
• 60g plain flour
• 200g icing sugar, plus extra to serve
• 60g ground almonds
• 60g unsalted pistachios, finely ground
• 5 egg whites
• grated zest of 2 lemons

Method

1. Preheat oven to 180C. Grease a 12-hole friand/muffin pan with a little bit of the melted butter. Lightly dust with flour and shake out excess.
2. Sift flour and sugar into a large bowl. Stir in ground almonds and ground pistachios.
3. Place egg whites in a small bowl. Lightly whisk with fork until frothed. Add to dry ingredients along with melted butter and zest, stirring until completely combined.
4. Fill each hole in the pan two-thirds full. Bake for 25-35 minutes until golden and cooked through. Remove from oven, leave to cool in pan for 5 minutes. Turn out onto wire rack to cool completely. Dust with icing sugar. Serve.
