Super-easy banana walnut bread

Fall in love with this tasty dish!

This delicious and incredibly simple dish is absolutely ideal for morning or afternoon tea. With only seven ingredients and a method that’s as easy as throwing everything in a bowl and stirring, this tasty, moist loaf will quickly become a family favourite. The addition of the walnuts adds a delicious nutty taste in each nite and ingests a little extra health kick, too. Walnuts are super rich in antioxidants and have been shown to help improve brain health. For the best taste, toast each slice and scrape over a thin layer of butter. Yum!

Ingredients

  • 300g (2 cups) self-raising flour
  • 70g (1/3 cup, firmly packed) brown sugar
  • 100g walnuts, coarsely chopped
  • 1 teaspoon bicarbonate of soda
  • 2 eggs, lightly whisked
  • 250ml (1 cup) milk
  • 1 cup (about 2 large) mashed banana

Method

  1. Preheat oven to 180C. Line base and sides of a 6cm-deep, 20 x 10cm loaf pan with non-stick baking paper.
  2. Sift flour into large bowl. Add sugar, walnuts and bicarbonate of soda. Stir together to combine.
  3. Place egg, milk and banana in bowl with dry ingredients. Gently fold until well combined. Spoon mixture into lined pan. Bake in oven for 45 minutes or until a skewer inserted into the centre comes out clean. Set aside to cool completely. Slice and serve.
