Super easy 4 ingredient ginger cookies

Deliciously sweet ginger biscuits.

There’s nothing quite like homemade cookies to welcome friends and family when you’re hosting a gathering. And these delicious snacks are some of the quickest and most impressive treats to whip up in no time at all.

Not only do they use minimal ingredients but they also only take about 10 minutes prep time. 

As they are egg free, they can also be served raw as dough balls. Just place them in the fridge to set and serve up without any baking necessary. 

Ingredients

  • 1 cup almond meal
  • 2 tsp ground ginger
  • 1/2 tbsp blackstrap molasses
  • 3 tbsp honey

Method

  1. Line baking tray with baking paper. Preheat oven to 170C. In a medium mixing bowl, combine almond meal and ground ginger. Mix to combine.
  2. In a small saucepan add honey and molasses.
  3. Heat over low heat until just melted, before pouring honey mixture into almond mixture.
  4. Stir with a wooden spoon until combined into a sticky dough.
  5. Grab a tbsp of mixture with hands and roll into a small ball. Place on baking tray in lines.
  6. Use hand to gently push balls down into biscuit thickness. Bake for 12 minutes or until lightly golden. Cool on rack until hard before serving.
