Delightful sour cream, bacon and cheese quiche

A quiche recipe is a bit like that for an omelette: you take whatever you’ve got in the fridge, freezer or pantry and turn it into something wonderful. Such was the case here.

The sour cream in this recipe makes the quiche so creamy. You can substitute bacon for ham, and you can lightly fry the onion, to soften, it if you wish. You can also add tomatoes or asparagus to the top if you’re feeling a bit fancy and require extra flavour.

Serves 6

Ingredients

  • 1 sheet puff pastry
  • 3 eggs
  • 300ml sour cream
  • 1 onion small
  • 4 bacon rashers
  • 1/2 cup cheese

Method

  1. Preheat oven to 180C.
  2. Grease and line a quiche dish with a pastry sheet.
  3. Place eggs in a bowl and whisk.
  4. Add sour cream and mix together until creamy.
  5. Add onion, bacon and cheese. Stir together then season with salt and pepper.
  6. Pour mixture into quiche dish and bake in the oven for 30 minutes.
