Savoury peach and yoghurt muffins

A delicious treat to have with your afternoon tea cuppa!

These savoury treats are the absolute best for a healthy morning snack or a treat throughout the day. They are super light and low on calories so you can enjoy as many as you like without feeling guilty! You can bake these and pop them in the freezer to have in the future or serve them up fresh with a cup of coffee or tea.

These original muffins will quickly become a crowd favourite and it won’t be long before people are begging you for the recipe!

Ingredients

  • 2 cups plain flour
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 3/4 tsp cinnamon
  • 2 large eggs
  • 1 cup plain greek yogurt
  • 1/4 cup + 2 tablespoons coconut oil, melted
  • 1/4 cup milk
  • 1 1/2 cup frozen or fresh peaches, chopped

Method

  1. Preheat oven to 180C. Grease a 12-hole muffin pan. Line with individual muffin cases. In a large bowl, add flour, sugar, salt, baking powder, bicarb soda and cinnamon. Whisk together to combine. In a separate bowl, add eggs, yoghurt, coconut oil and milk. Whisk well to combine.
  2. Add wet ingredients into the dry ingredients. Add in chopped peaches. Stir well until just combined. Spoon batter into prepared pan.
  3. Bake for 20-23 minutes. Leave to cool in pan for 5 minutes. Turn out onto wire rack to cool completely. Serve.
